Environment

This filter has been designed for use in non-pressurized deep fat frying tanks with normal edible oils such as Sunflower oil. Sunflower oil has proven indicative results obtained with other similar grade deep fat frying oils.

Additives

In tests, additives such as PDMS and powder based refiners have little or no affect on the FriPura™ filter, but naturally produce toxic by-products such as formaldehyde which coat the food with a greasy layer, so for reasons of cost and general negative performance attributes, maximum benefit will be obtained if pure/blended oils are used without other improvers.

Filtration

Mechanical filtration is still recommended if the foodstuffs produce debris, such as breadcrumbs, as these may cover the filter and reduce the FriPura™ filter efficiency. It has been shown that debris causes little oil degradation but can adversely affect food appearance and flavour through depositions on the food.

Method

The FriPura™ filter will be supplied in sealed packaging and this should not be opened until point of immediate use.

NEVER let water or steam come in contact with the FriPura™ filter as this may affect the filter performance and potentially cause an accident through the mixing of water and hot cooking oil.

Ensure your fryer has a working thermostat. Set this to a nominal 160°C, or other temperature recommended by your oil supplier. Never exceed the smoke-point temperature of the oil.

The best time to load the FriPura™ filter(s) in to your tank is when you are filling this from empty after cleaning. Nominally 1 FriPura™ filter will treat 10L of oil.

Remove the filter(s) from the packaging and place in the bottom of your fryer tank. Use DRY HANDS.

Do not place directly on electric elements or over gas burner upstands within the tank. These locations are unlikely to damage the filter but may hinder efficient heat transfer into the oil.

The FriPura™ filter will work laid flat on the bottom of a normal fryer oil tank.

Fill the tank with oil as normal and turn on the heater. The FriPura™ filter will bubble as air is expelled. By the time the oil is up to temperature the filter will be ready for use.

If the FriPura™ filter is still gassing-off it is recommended to wait until this has stopped before adding the food, as the filter will be most effective when fully "conditioned".

Fry as normal and try to keep the temperature below the smoke point through use of the thermostat.

Please note that without a FriPura™ filter cooking oil normally degrades over time causing poor thermal transfer into the food requiring a raising of temperature as the oil ages. This should not be necessary with the use of FriPura™ filters.

Top up oil as normal as per your normal standard operating proceedures. This requirement should be reduced when employing a FriPura™ filter.

Mechanically filter to remove debris as normal to preserve food appearance.

DO NOT WASH The FriPura™ filter in water. If the filter becomes covered in debris, remove and wipe clean with a cloth soaked in cooking oil WHEN THE OIL HAS FULLY COOLED. The filter should NEVER be removed from hot oil so it is recommended that cleaning is only performed before your oil is heated for use.

FriPura™ filters are robust and all materials used in their manufacture are FDA approved "food safe". However if your FriPura™ filter does break for any reason, remove any debris to prevent accidental ingestion with the food. Large pieces may be left, as they will continue to work normally.

Users will find a significant increase in the service life of their cooking oil when using FriPura™ filters, but eventually it will become necessary to both change your oil and the Fripura™ filter.

The optimum time to change the FriPura™ filter is when changing your oil and after emptying your fryer tank for cleaning.

Do not reuse the FriPura™ filter.

Dispose of your FriPura™ filter in your normal restaurant waste or recycle as directed by your recycling agent.
